Vegan Elote Burger

Is it just me, or does this burger look un-F**cking-real! Let's make it.



  • 2 corn on the cob or tinned sweetcorn if you canny be asked to remove the kernels
  • 1 packet of beyond burgers, or more if you're doubling up
  • 1 avocado sliced up
  • Lettuce
  • Some lovely plant-based buns
  • 2 generous tablespoons of vegan mayonnaise
  • 2 not so generous tablespoons of vegan sour cream
  • ½ tablespoon olive oil
  • ½ a lime squeezed!
  • 2 teaspoons of chili powder or flakes
  • ¼ cup finely chopped cilantro
  • Sea salt for seasoning or kosher salt
  • ½ a cup of shredded vegan parmy cheese (vegan parmesan cheese)



To create the Elote

  • Grill corn until all sides are charred. Cut grilled corn kernels from cobs, unless you opted for canned in which case you need to pat dry the corn first
  • Grab a bowl and mix together all the ingredients, toss, chuck, spin, and get it mixed up goooood
  • Now add the kernels and salt bae that beaut

Burger instructions  

  • Grill the Beyond Burgers on a lightly oiled, heated grill. Grill on medium to high heat for 3 minutes on one side then flip and grill for another 3-4 minutes
  • Add the lettuce to the bottom of the bun, followed by that juicy vegan burger, now add the avo and lather with the mix! Top bun seals the deal and now devour!
