Vegan Chicken Cauliflower Salad
Ingredients
A quarter of red pepper or green if you're feeling fruity
2 plump tomatoes
A hand full of mint lives
Leaves from one rather large cauliflower
1 Moving Mountains No Chicken Burger
1 cup of parsley leaves, ideally fresh
Half a red onion
1 small onion, sliced
Olive oil/ balsamic vinegar/your ex's tears... whatever you like to dress your salads with
Methods
- Get your oven nice and toasty to 220°C. Grab your cauliflower and Break the leaves off, chop those into thin pieces, and slap them into a baking tray. Drizzle with 2 tablespoons of the dressing you love, sprinkle some salt and pepper, and now roast until cooked through and golden brown, this should take about 20 minutes.
- Now your cauliflower is sizzling in its very own hot bath, this is your chance to get your Moving Mountains No Chicken Burger in the oven! Cook this burger per packet instructions, as I can't be bothered to explain that...
- Now let's get dicing, and prepare the rest of your ingredients. Chop your tomatoes, red pepper, parsley, red onion, and mint. Feel free to add some extra veggies, it's your meal.
- Now toss it all together. Slice that vegan chicken burger, pop it on top, and drizzle it with your dressing
