Dan Dan Noodles - MM Style

Vegan dan dan noodles

 

Dan Dan Noodles 

It’s Veganuary… and you’re looking for inspiration to become the plant-based, goddess, chef-extradoniaire you’ve always known you are! Well, look no further because we’ve got a noodly vegan treat for you to try out! 

This Chinese noodle dish packs a punch! 

Dan Dan noodles or Dandanmian actually translates to ‘’carrying-pole noodles’’. It’s a right spicy sort!

 

INGREDIENTS

3 garlic cloves, minced

5 cm ginger, peeled and finely chopped

1 tbsp sesame paste (can be tahini)

30g peanuts, roughly chopped

1 pack Moving Mountains Mince

1 pak choi, leaves picked and trimmed, bigger leaves cut in half

3 spring onions, finely sliced

300ml vegetable stock

200g fine wheat noodles

1 tbsp sesame oil

1 tbsp soy sauce

1 tbsp 5 spice

Chilli oil to serve

 

METHOD

  1. Get those noodles cooked per pack instructions
  2. Heat the oil in the frying pan on medium heat. Add the Moving Mountains mice, make sure you separate the mince and keep cooking until it starts to turn brown, now add the soy sauce and remove the mince from the frying pan
  3. Now add the 5 spices, garlic, ginger, and chili oil. Add the sesame oil if the mixture is too dry. Now after cooking for a few minutes add the sesame pasta and vegetable stock. Simmer for 5 minutes and add half the print onions, all the pan Choi, and half of the peanuts, cook until the pan Choi softens. Now add the mince back to the pan. Start to mix all the ingredients and turn the heat off! 
  4. Now pour the mince and veggies onto the noodles and do your best salt-bae impression and sprinkle the remaining spring onions and peanuts.
