Silvi decided it was time to stop using eggs in the making of her meringues an create an entirely vegan range that would offer equally indulgent alternatives to those choosing a plant-based diet. She set out to achieve the classic crunchy meringue texture using entirely vegan ingredients. Her innovative approach uses chickpea water (known as aquafaba), unrefined sugar and natural flavourings.

After nine months of tweaking and tasting, our Plant Based Meringues are ready!

While they may be small in size, London Apron meringues are definitely BIG in flavour. Available in Vanilla, Raspberry and Candy Floss, each one is a sweet swirl of mouthwateringly delicious flavour with a uplifting light texture.

Silvi officially launched London Apron in all Selfridges stores in January 2020. Passionate about her craft, she can nearly always (pretty much always tbh) be found in the kitchen, cooking up her next innovation.
